Breakfast banana bread treat

Sometimes, out of nowhere, comes that craving for a scrumptiously delicious, succulent slice of banana cake. What better breakfast pick me up, especially with a steaming hot cup of coffee.


Annnnnnnnd, then we thought ... well, this just goes so nicely with our USA Road Trip Playlist ... the heavenly banana bread did originate in America after all did it not? 😀. So come on everyone, picture the morning ... a steaming pot of coffee on the go, a slice of breakfast banana bread and press ▶

TTC's Vegan Banana Bread recipe

Prep and cook time, we estimate:

50 - 60 minutes


Ingredients

😋 3-4 ripe bananas

😋 70 ml vegetable oil

😋 225g plain flour

😋 2 good tsp baking powder

😋 100g brown sugar

😋 2-3 tsp cinnamon

Optional:

😋 50g raisins

😋 50g chopped walnuts



Method

1. Heat the oven to 200’C/gas 6. Line a bread tin with baking paper or use a silicone one.


2. Get yourself a big bowl and add the oil, sugar and dried fruit/nuts if using - mix together.


3. In another bowl, reeeeally mash up the bananas. Add to the mix and combine well.


4. Now add the cinnamon and baking powder - then while stirring, add the flour. Make sure it’s all mixed together well.


5. Put the mixture into the bread tin and get it in the oven👌


6. Check it after 15-20 minutes to see if it’s brown on top - you want it to be a nice gentle brown as opposed to the burnt brown variety! 🤭 At this point, cover the top with foil to stop it browning too much and put it back in the oven for 20-25 minutes.

Get the coffee on! 😁

Serving Suggestions

This is the perfect breakfast for a pick me up - especially with a black coffee 😳🤣


Helpful swaps

Switch the raisins for any dried fruit you like
